Vegan Pesto with Zoodles

Dairy-Free, Egg-Free, Gluten/Grain-Free, Low Carb, Refined Sugar-Free, Soy-Free, Vegan


1 c raw soaked cashews
2-4 Tbsp warm water
2 Tbsp lemon juice
2 Tbsp olive oil
pinch salt
5-6 cloves roasted garlic
2 packed cups basil
1/2 cup nutritional yeast

Combine all ingredients in food processor or high power blender… (Add more water if it’s too thick)


3-4 zucchini

Salt, pepper, and oil of choice for sauteeing

Use a spiralizer, julienne cutter, food processor with a shredder attachment, or even a cheese grater to make long or short zucchini strips. Sautee for on medium heat 5-7 minutes til zoodles are soft.

Pour pesto over zoodles and heat through. Enjoy!!!
