Dairy-Free, Gluten/Grain-Free, Refined Sugar-Free, Soy-Free
2 ½ cups almond flour
¾ tsp baking soda
¼ tsp sea salt
1/3 cup melted coconut oil
1/3 cup honey
2 Tbsp coconut milk
2 medium apples, peeled and chopped
*Optional, add ½ cup chopped pecans or walnuts
- Preheat oven to 375°, grease 8x4x2 loaf pan with coconut oil
- Combine almond flour, baking soda, and sea salt in medium mixing bowl. In a smaller bowl, combine eggs, coconut oil, honey, coconut milk, apples, and essential oils. Add mixture to dry ingredients and stir til combined. Pour batter into prepared pan. Bake 50-60 minutes til toothpick inserted in center comes clean.
- Cool in pan on cooling rack for 15 minutes. Remove from pan and cool completely before slicing. Delicious served with melted dairy-free butter substitute and drizzled with honey!
Yields 1 loaf
