Low Carb Pumpkin Bread

Dairy-Free, Gluten/Grain-Free, Low-Carb, Sugar-Free, Soy-Free


2 ½ cups almond flour

1 tsp baking soda

¼ tsp sea salt

1 c erythritol

2 drops liquid stevia extract

4 eggs

1/4 cup melted coconut oil

1 cup pumpkin puree

3 drops Young Living Cinnamon Bark Vitality Essential Oil

2 drops each: Young Living Clove Vitality Essential Oil, Young Living Ginger Vitality Essential Oil, Young Living Nutmeg Vitality Essential Oil


  • Preheat oven to 350°, grease loaf pan with coconut oil
  • Combine almond flour, baking soda, erythritol, and sea salt in medium mixing bowl. In a smaller bowl, combine eggs, coconut oil, stevia extract, and essential oils. Add mixture to dry ingredients and stir til combined. Pour batter into prepared pan. Bake 50-60 minutes til toothpick inserted in center comes clean.
  • Cool in pan on cooling rack for 15 minutes. Remove from pan and cool completely before slicing.

Yields 1 loaf
