Low Carb Brownies

Dairy-Free, Gluten/Grain-Free, Low-Carb, Sugar-Free, Soy-Free

 

3 ½ cups almond flour

1/2 cup cocoa powder

2 tsp baking soda

2 tsp sea salt

1 1/3 c erythritol

3 eggs, whipped

1/2 cup melted coconut oil

1/4 cup unsweetened almond or coconut milk

Optional add-ins: 1 c pecans or walnuts, 3 drops Young Living Peppermint Vitality Essential Oil, or 3 drops Young Living Orange Vitality Essential Oil

 

  • Preheat oven to 350°, grease 8×8 square pan with coconut oil
  • Whip room temperature eggs until light and fluffy. Combine almond flour, cocoa powder, baking soda, and sea salt in separate bowl. Add erythritol to eggs and mix thoroughly. Add dry ingredients, coconut oil and almond milk, and fold until incorporated. Pour batter into prepared pan. Bake 30-35 minutes until toothpick inserted in center comes clean.
  • Cool in pan on cooling rack for 15 minutes before serving.

Yields 9 brownies
